Spinach, Asparagus, and Strawberry Salad

INGREDIENTS

1 pound asparagus, rinsed, ends trimmed, and cut into 1-inch pieces

Salt

2 tablespoons light raspberry or balsamic vinaigrette

8 ounces spinach leaves, rinsed

8 ounces strawberries, rinsed and sliced

Pepper

DIRECTIONS

1. Cook asparagus (we recommend roasting or grilling for best flavor, or frozen steam bags for fastest cook time). Let cool.

2. Mix vinaigrette, spinach, strawberries, and cooled asparagus. Add more salt and pepper to taste.
