Berry Summer Salad

1 Serving (1 Serving  = 275 Calories)

INGREDIENTS
2 cups Spinach
1/2 cup Sweet Potato, cubed and roasted
1/2 cup Red Bell Pepper, chopped
1/2 cup Strawberries, sliced
1/2 cup Blueberries
1/2 Avocado, sliced
Salt and Pepper to taste
Juice from 1/2 Lemon
2 tablespoon Balsamic Vinegar

DIRECTIONS
1. Preheat oven to 450 degrees. Prep baking sheet with aluminum foil or parchment paper and cooking spray.

2. Cut sweet potato into cubes, place on baking sheet, sprinkle with salt and pepper, and roast 15 min on each side.

3. Once sweet potatoes are cooked, place all ingredients in a large Tupperware or bowl, cover and shake to coat vegetables in dressing.

4. Move to a plate and enjoy.
