Baked Chicken Meatballs

4 Servings (1 Serving = Roughly 250 Calories)

INGREDIENTS

¼ cup Egg Whites or Egg Substitute

1 pound 93% Lean Ground Chicken

3 slices Low Calorie Bread (toasted and crushed into bread crumbs)

1 teaspoon Dried Oregano

½ teaspoon Garlic Powder

½ teaspoon Onion Powder

½ teaspoon Salt

¼ teaspoon Red Pepper Flakes

3 tablespoons Flat-Leaf Parsley, finely chopped

2 ½ cups Fresh Spinach

DIRECTIONS

1. Preheat the oven to 400℉. Spray a baking sheet with nonstick spray.

2. In a large bowl, add all ingredients. Mix until well combined. Be careful not to press the meat too firmly. Keep the mixture fairly loose.

3. Split the mixture into 4 equal portions. This will be your serving size.  Shape as many meatballs as you can out of each portion. Arrange the meatballs on the baking sheet so that they do not touch.

4. Bake the meatballs in the upper third of the oven for 20 minutes, or until cooked through.

Serve plain, with a traditional tomato sauce, with buffalo and ranch dip, or with something more exotic. For a treat, try our Orange Ginger Sauce recipe!
