Egg Muffin Cups

4 Servings (1 Serving = 3 Muffins = roughly 120 Calories)

INGREDIENTS

4 Whole Eggs

4 Egg Whites

2 cups Baby Spinach, roughly chopped

2 cups Bell Peppers, chopped

1 cup Yellow Onion, chopped

1 cup Mushrooms, chopped

2 cloves Garlic, minced

Salt and Pepper to taste

DIRECTIONS

1. Preheat oven to 350ºF.

2. Whisk eggs and egg whites together in a large bowl. Stir in the remaining ingredients.

3. Spray a muffin pan with non-stick spray. Fill 12 cups evenly with the egg and vegetable mixture.

4. Bake for 15-20 minutes or until tops are firm.

Let cool in pan and then serve immediately or store in an airtight container in the refrigerator.
