Deconstructed Tamales

1 Serving (1 serving = roughly 300 calories)

INGREDIENTS

4 ounces Chicken, cooked and shredded

1/4 Cup Salsa Verde

1 TBSP Pickled Jalapeno, chopped

1 Packet Instant Cheddar Grits

1 TBSP Taco Seasoning (or 1 tsp EACH of Onion Powder, Garlic Powder, and Cumin)

1/2 Cup Chicken Broth

DIRECTIONS

1. Mix the first 3 ingredients together.

2. Mix instant grits with taco seasoning in a 2 cup bowl. Prepare according to package directions, using chicken broth in place of water or milk.

3. Place chicken over cooked grits. Serve with vegetables of choice (we like cherry tomatoes, roasted corn, refried beans, and sautéed celery, carrot, onion and peppers)!
