Grilled Steak Arugula Salad with Peaches

Phase 2 - 4 Servings

INGREDIENTS

1 lb. skirt steak, trimmed of fat

1/4 c. balsamic vinegar

1 clove garlic, minced

1 tbsp. brown sugar substitute (like SPLENDA® Brown Sugar)

Salt

Black pepper

Juice of 1 large lemon

6 c. arugula

2 peaches, thinly sliced

DIRECTIONS

1. Marinate steak in a baking dish with balsamic vinegar, garlic, and brown sugar substitute for 20 minutes at room temperature.

2. Season steak with salt and pepper as desired. Grill on high heat until desired doneness (3 minutes per side for medium rare). Let rest 5 minutes, then slice.

3. In a large serving bowl, add arugula, peaches, and steak. Drizzle with lemon juice and gently toss. Enjoy.
